Margarita Shrimp Salad
Ingredients:
- – 2 lbs. shrimp, peeled and deveined
- – 1 bunch green onions
- – 1 ripe tomato
- – Leafy greens
- – A few sprigs of fresh mint and lime wedges for garnish
Talero Salad Dressing
- – 2 tablespoons fragrant olive oil
- – 2 teaspoons Talero Tequila
- – Crushed mint
- – Lime juice from 1 key lime
Marinate shrimp for several hours in the refrigerator. Grill shrimp over highheat fire, 2-3 minutes on each side until tender and cooked. Remove from heat and let cool to room temperature.
Serve on bed of leafy greens with tomato and green onion, drizzle with dressing. Garnish with fresh mint or lime. This is a versatile dish that can also be served on a bed of rice, in a fajita or on its own with corn pudding.
